Bambi in Florence means tripe and lamprey: since 1890 the history of the Bambi family has been closely linked to offal and to an ancient craft that requires a great deal of dedication: that of trippaio which means tripe maker.
For over 130 years Bambi has been on the market with its recipes and it is also the only reality in Tuscany to work the raw material right from the beginning of the supply chain.
